Hot Cross Buns - Recipe

Ingredients:

Buns:

  • 4 cups of plain flour
  • 2 packets of yeast
  • 1/4 cup of sugar
  • 2 teaspoons of mixed spice
  • 1 teaspoon of cinnamon
  • 1 pinch of salt
  • 1 teaspoon of vanilla essence
  • 1 cup currants
  • 1/2 cup sultanas
  • 50 ml of olive oil
  • 200ml of mlik
  • 2 eggs, lightly beaten

 

Cross:

  • 1/2 cup plain flour
  • 5 tablespoons of water

 

Glaze:

  • 1/4 cup water
  • 2 table sppons of sugar
  • 1 desert spoon of honey

 

Method:

  • Mix the flour, yeast, sugar, spices, salt, and dried fruit together in a mixing bowl.
  • Mix the milk, vanilla, and oil together in a large cup. Microwave on high for 45seconds stir, and then microwave on high for another 45 seconds, or until the milk is lukewarm. Add this to the dried ingredients in the mixing bowl.
  • Beat 2 eggs and add to the mixing bowl.
  • Turn on your mixer on low until the dough comes together.
  • Knead the dough on a floured surface until it is smooth. Then place it in a lightly floured bowl, and set aside for 2 hours to raise.
  • Line a large baking tray with baking paper and grease it lightly with olive oil.
  • Knead the dough back to its original size. The divide the dough into 12 roughly equal balls. place the on the tray and leave for 30minutes to rise.

  • Make the cross flour paste by mixing the flour and water together until smooth. The put the paste in a small plastic bag. Cut one bottom corner off the bag and then pipe crosses onto the buns.
  • Bake the buns for 20 minutes at 170C or until cooked through.
  • Make the glaze by heating the water sugar and honey in a pot on the stove.
  • After the buns have been baked, brush the glaze onto them. Wait for them to cool a little and then enjoy.

Korean Fried Chicken - Recipe

Ingredients:

  • 1lb of Chicken Breast, cut into bite size pieces.
  • Canola oil for Frying

 

Marinade Ingredients:

  • 1 teaspoon Ginger Powder
  • 1 diced clove of Garlic
  • 1 teaspoon Black Pepper
  • 1/2 teaspoon Chili Powder (or more if you want hotter)
  • 2 teaspoon Sweet Paprika
  • 1 teaspoon Old Bay seasoning (or similar)
  • Dash of Tamari Soy Sauce
  • Dash of Cooking Sake
  • Dash of Oil

 

Coating Ingredients:

  • 2 Cups of Plain Flour
  • 1 teaspoon Salt
  • 1 teaspoon White Pepper
  • 1 teaspoon Sweet Paprika

 

Method:

  • Place the chicken pieces in a bowl, add the marinade ingredients (dry first then wet) and then mix together. Leave to marinate in the refrigerator for at least 2 hours.

  • Mix the coating ingredients together
  • Individually dip each piece of chicken into the coating covering it thoroughly before setting aside on a plate.
  • Leave the coated chicken to rest for 15 minutes.

  • Heat up your frying pot, and then add enough oil to the pot such that the chicken pieces will be immersed in the oil.
  • When the oil is hot enough, bubbles whould start to form if you dip a wooden spatual into the oil, add in the chicken.
  • Cook until golden brown.

  • Remove the chicken from the pot, and leave behind as much oil a possible.
  • Place the chicken on an absorbent paper towel to remove excess grease, and allow the chicken to rest for 5 minutes before eating.

  • Enjoy either straight up, with dipping sauce, or Ottogi mayonnaise
